A delicious sparkling Shiraz from 2023. 

Shiraz grapes hand picked from our old Fulford Road block.

Whole berry fermentation with daily plunging, pressed off skins and matured in seasoned large format oak to allow to soften and balance out. 

We use the traditional bottle fermentation method here, matured on yeast lees for 2 years, hand riddled and disgorged, cork and wire by us here at the winery… and hand labelled. We do all our sparkling work in house using this time honoured method.

This wine is loaded with delicious red fruit, some light pepper spice, and lots of richness while still being precise and undeniably varietal.

Disgorged with 28g/L sugar.
